This red wine evokes aromas of ripe blackberries and bittersweet chocolate with hints of rose petal and wild sage. This transitions to an impeccably balanced palate with black plum notes and a fresh acidity interlaced with velvety tannins leading to a long memorable finish. This vintage of Hickinbotham Trueman Cabernet Sauvignon had an archetypal growing season with consistent winter rains and favorable weather conditions throughout a mild spring. A dry summer led to earlier than expected picking dates and smaller yields. With the arrival of autumn, cool temperatures elongated the growing season producing grapes with concentrated flavors and balanced acidity.
The grape clusters were hand-picked, destemmed, and gently crushed to open-top fermenters. Berries were cold-soaked and pumped over daily with a minimum of 18 days on skins. Post-fermentation, the must was basket pressed with light pressings added to free-run and hard pressings kept separate. Aged 15 months in fine-grain Bordeaux coopered barrels, of which 75% were new.
